How To Cook The Most Delicious Miso Eggplant At Home

Looking for easy ways to level up your cooking skills? We asked Guy Turland to share some kitchen secrets for #isoeats.

Who are you and what do you do?
My name is Guy Turland, I’m a chef, surfer and the owner/founder of Bondi Harvest.

What’s your favourite dish?
That’s a really hard question to answer as a chef. After coming back from Italy a few months ago I'll have to go with a well-made pizza or fresh gelato out of the churner!

What’s your favourite budget meal to cook?
Red lentil dahl. Every time I make it, it blows my mind how only a handful of cheap ingredients can create a dish that's loaded with so much flavour. My recipe is literally just lentils and dried spices.

What are you cooking for us today?
This is my recipe for miso glazed eggplant for two – it’s super simple and a great meat-free option.

Ingredients

1 Eggplant (Aubergine)
2 Tbsp Miso Paste
1 Tbsp Sesame seeds
1 Tbsp Mirin
2 Tbsp Sake
1 Orange
3 Radishes
1 serve of soba noodles
1/4 cup fresh coriander and mint

Method

1. First slice your eggplant in half then cut a deep criss-cross in the fresh on the eggplant.

2. On a hot pan sear the eggplant flat side down until golden and nicely caramelised.

3. To make the Miso glaze combine Miso paste, sesame seed, mirin, and sake into a bowl and mix. Spoon this over your eggplant making sure the glaze penetrates between the earlier cuts.

4. Place the eggplant in the baking tray and bake in the preheat oven at 180C for 20 minutes (time will vary depending on how big your eggplant is).

5. For our salad cook soba noodles as directed on the package, segment an orange, finely slice your radishes (use a Japanese mandolin if you have one) and pick a handful of mint and coriander.

6. Plant your eggplant with salad on top.

Eggplant, I feel people aren't sure what to do with it or feel it’s a boring vegetable which is why I’ve picked this epic miso glazed eggplant recipe.
