How To Cook Arrabbiata At Home In 4 Easy Steps

Looking for fun ways to spice up your at-home menu? We asked @instakrill to share some kitchen secrets for #isoeats.

Who are you and what do you do?
I'm Mitch Orr and I make marvellous shit to make your mouth water. I'm also head chef at CicciaBella in Bondi.

What’s your favourite dish?
That's such a hard question as I really have to eat what I'm craving to be satisfied. But with all this extra time on our hands, deciding what the hell to eat is harder than ever. I'll say dumplings and pizza.

What’s your go-to budget meal to cook?
Rice, eggs, lap cheong and furikake. Or Nong Shim ramen with the addition of fishballs.

What are you cooking for us today?
This is a pretty simple alla arrabbiata. We mix it up a little with the use of lao gan ma, which is a Chinese chilli condiment. To all the Italians, I know traditional arrabbiata doesn’t have lao gan ma in it. Deal with it.

What’s one utensil every kitchen should have?
My home kitchen is extremely ill-equipped, and this is going to be cliche, but a quality sharp knife.

What do you think is the most overlooked ingredient in the average supermarket?
Look, before corona came and turned the world upside down, all I ever had in my fridge was coconut water so I'm probably not the best person to ask. But I think we probably take onions and garlic for granted.

You only have 5 minutes in the grocery store – what do you fill your basket with to last you a week?
Nong Shim ramen, coconut water, garlic, ginger, rice and eggs.

Who would be at your dream dinner party?
Denzel Washington, Rihanna and Michael Pollan.

Where can we find your takeaway menu?
We're not doing takeaway just yet but stay tuned. I am making pasta for Saint Peter's meals at home once a week so keep your eyes peeled!
