How To Whip Up A Refreshing Acai Bowl With Sour Cherries

Just blend, sprinkle and serve.

Acai (ah-sigh-EE) berries, harvested from acai palm trees, are a grape-like fruit, native to various South American countries. An acai bowl – made with the mashed up acai fruit – is full of antioxidants, which may improve cholesterol levels, and boost brain function.

Acai bowls are a Brazilian specialty, but are really simple to make at home – just a few ingredients blended together and finished with your favourite toppings. They’re really that easy! The consistency is key, so keep the frozen ingredients in the freezer until you are ready to use them, and serve immediately. If you have multiple guests for brunch, you can slice up the fruit on a platter with granola (and any other toppings) and place in the middle of the table, allowing everyone to decorate their own. 

Ingredients below are for one individual serve. Double or triple and repeat method for each guest. 

Ingredients: 
- 100g frozen acai berries  
- 100ml chilled orange juice
- 1 frozen banana (overripe for more flavour) 
- 100g frozen sour cherries (or frozen raspberries / blueberries) 
- Toppings: add your favourite toppings in your desired quantity e.g. handful granola, fresh fruit (my favourites are cherries, starfruit, passionfruit, kiwi for their colour and shapes), chia seeds, cacao, peanut butter, coconut and edible flowers. 

Method:
1. If you have time, slice the banana and freeze for a few hours. A room temperature banana works fine, too, but when it’s frozen, it just ensures a longer-lasting, thicker consistency. 
2. Add the acai berry packet, orange juice, banana, frozen sour cherries to a blender or use a large bowl and hand blender to combine. Blend until smooth. Pour into a serving bowl.
3. Top the bowl with as much (or as little) of your favourite granola, fruit, and honey, if you have a sweet tooth. Enjoy immediately.
