How To Make Chewy Chocolate Chip Cookies

Wondering what to fill their stockings with this Christmas? These deliciously soft and gooey choc-chip cookies are sure to make them happy. Make a big batch, wrap them in irresistible little packages and share them with your loved ones. 

There are a few secrets to chewy chocolate chip cookies. Firstly, don’t use chips; opt for a mix of milk and dark chocolate chunks. The second is to roll the dough into a log to get even-sized cookies, and lastly, let the dough chill in the fridge for 30 minutes or overnight for a more complex, toffee-like flavour.  With these little tweaks, the result is a cookie that’s textured on the outside, and soft and gooey on the inside. 

Ingredients:
- 200 g almond meal or almond flour 
- 80 g  mix of dairy and dark chocolate, chopped into chunks 
- 100g shredded coconut
- 1/2 tsp baking powder
- Pinch sea salt 
- 80g coconut sugar 
- 1 large egg
- 45 ml coconut oil (melted)
- 1/2 tsp vanilla extract

Method:
1. In a large mixing bowl, stir together almond meal, chocolate chunks, shredded coconut, baking powder, salt and sugar.
2. In a separate bowl, beat egg and then whisk in the coconut oil and vanilla, before adding to the dry ingredients. Use your hands to mix until combined. 
3. Use baking paper to roll the cookie dough into a log and chill in the fridge for 30 mins or overnight.
4. Preheat oven to 190C 
5. Slice dough to your desired cookie width and then gently shape with your hands and smooth any wrinkles. Place on a baking sheet with 1-1/2 inch space in between each. Press down slightly to flatten a bit.
6. Bake until edges begin to brown, 7-10 minutes.
7. Remove from the oven and let cool before serving. If you’re making them for gifts, consider wrapping a small bundle in baking paper, tie with twine and add a sweet little note to finish.
