You’re not going to find too many kids who object to something cake shaped for brekky! These banana and blueberry muffins are very easy to make and fit the bill perfectly, plus we bet the kids will volunteer to make them too. They are also ideal to grab when you’re on the way out the door in the morning or pop in a lunchbox for later.

Ingredients:
Makes 12 muffins
- 3 large ripe bananas
- 150g coconut sugar or brown sugar
- 1 egg, beaten
- 60g coconut oil or butter, melted
- 200g blueberries (frozen or fresh)
- 2 teaspoon baking powder
- ½ teaspoon salt
- 100g plain flour
Method:
1. Mash bananas in a large mixing bowl. Add sugar and egg, before stirring in the melted coconut oil (or butter if using) and blueberries.
2. Combine dry ingredients and gently stir into banana mixture.
3. Pour into 12 well-greased muffin cups.
4. Bake at 200 degrees for 20 minutes.
