Wow party guests with your cocktail menu this New Year's Eve and beyond with three delicious drinks that are easy to make at home. Whatever your spirit of choice, these refreshing beverages will keep you cool through the hottest months.


Elderflower, Cucumber, Gin
- 2 shots gin
- 1 shot elderflower cordial
- 1 lime
- 1 baby cucumber
- Soda water
- A sprig of fresh mint, plus more for garnish
- Fresh elderflower for garnish (optional)


Method:
1. In a cocktail shaker, muddle the cucumber, mint and gin together.
2. Next, add the juice of a lime and the elderflower cordial, plus a small handful of ice. Give it a good shake, and strain into a glass.
3. Top up with a little soda water — this amount depends on how strong you’d like the drink.
4. Garnish with cucumber slices or ribbons, fresh mint leaves and a sprig of fresh elderflower if you can find it.

Grapefruit Margarita
- 2 shots tequila
- 1 shot orange juice or orange liqueur
- 1 shot fresh-squeezed lime juice
- 4 shots fresh-squeezed pink grapefruit juice (1 grapefruit)
- Simple syrup or your favourite sweetener to taste (I use a few drops of liquid stevia)
- Sea salt, for rim
- Grapefruit wedges, for serving (optional)
1. Mix tequila, orange liqueur, lime, and grapefruit juices well. If you think you need a little more sweetness, add a splash of simple syrup.
2. Rub one of the used lime or grapefruit rinds around the rim of two glasses and dip in sea salt.
3. Fill each glass with ice and pour in the margarita.

Pomegranate Prosecco
- 1.5 shots pomegranate juice
- 1 shot vodka
- 4 shots prosecco
- 1 tablespoon pomegranate arils
- a sprig of rosemary for garnish
1. In a cocktail shaker add pomegranate juice, vodka and shake. Pour into glass and top with the Prosecco.
2. Add in the arils and garnish with a sprig of rosemary.
