7 Weeknight Meals That Aren’t Pasta

And yes, they’re more exciting than an omelette.

“Spaghetti can be eaten most successfully if you inhale it like a vacuum cleaner.”

These are the wise words of Sophia Loren, the woman who really knew her way around a plate of pasta. Also:

“Everything you see, I owe to spaghetti!”

I’m with her, 100 percent. It’s fair to say that carbs are one of the great loves of my life. There’s nothing I love more than a bowl of pasta (or three). Not everyone, though, is on board with the Loren manifesto. My nutritionist for one. My boyfriend, for another. (He has requested “variety” in our meal planning. And he made it clear that bolognese one night and puttanesca the next is not “variety.”)

So, in the spirit of mixing it up, we we turned to chefs of Instagram to get us out of out midweek rut...

The one-pan wonder

Teresa Cutter is a chef, a nutritionist and the woman whose guides are our go-to for anything green. Her one-pan kale and quinoa salad with lemon and persian feta is the easiest weeknight meal, plus, as Cutter commens: “any leftovers can be taken to work for lunch the next day.” Trade out any of the ingredients for whatever is in your crisper. Handy hint: Throw in some broccoli for a really good time.

Guy Turland runs the empire that is Bondi Harvest, here and in the States, and he’s known for his light, fresh wholefood recipes that will have you asking for more. A surfer, it’s not surprising that the bulk of his fare come from the drink. Best of all: he’s a massive fan on the only-using-one-tray philosophy. A win for anyone on washing up duty.

“It’s pretty hard to be motivated to cook in this weather, the only thing I want to do is be in the ocean … But food does not have to be complicated to be delicious,” Sian Redgrave, the cook, food stylist and recipe developer who took out the Great Australian Bake Off a few years back tells us. Her simple throw-together salad of roasted sweet potato, spinach, cucumber, pomegranate and feta, dressed with lemon and olive oil is now a regular for both lunch and dinner. Her tip? Toss the potato with smoked paprika and sumac pre roasting. Like she says, “Minimal fuss, maximum flavour!”

“I want steak / lamb / chicken.” This request comes through my head on the regular, closely followed with the “but what with?” question that normally sends me into Give-up-and-have-pasta territory. No longer thanks to Holly Inglis, the Melbourne-based  recipe developer and content creator. Her smoked Paprika roasted carrots play nice with just about everything and are great, too, to add to a grazing platter.  “So quick to make and full of flavour,” she writes. “Drizzle in tahini for the perfect finish.”

The feel-better soup

Pretty much everything we find on @healthy_ish is a really good time, and this is no exception. Their “Feel-Better Chicken and Rice Soup” is comfort food at its simplest and most delicious. “The flavour here comes from boneless, skinless chicken thighs, which hang out in a bath of hot water, aromatics, and rice—i t’s going to put your usual store-bought stock to shame. Oh, and the whole thing is done in about a half an hour. We bet you’re feeling better already.” Like they said.
